Easy to Make Banana Bread

I love banana bread, and I can’t think of anyone that I know anyway, that doesn’t.  

Since you’ve clicked on this post, I take it you’re one of us. The BBLs. (Wait that means something else.) I’m talking about, Banana Bread Lovers.

Anyway, this easy recipe is perfect to add to breakfast, as a snack and even a tasty dessert. It’s also great to make with your kids, or something you and your partner can do together.

Ingredients

  • 2 cups all-purpose flour
    • 1-2 Tablespoons more might be needed if in a humid climate
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 cups white sugar
    • Some people add as little as ½ cup.
  • 1 cup butter, softened
  • 2 cups mashed overripe bananas
  • 4 large eggs, beaten

Optional

  • 1 cup chopped walnuts
  • 1 cup Chocolate chips
    • 1 teaspoon flour to toss your chips in

I love adding chocolate chips; however, my husband is not a fan. So, I make two pans, one with chips and one without.

Directions

Preheat oven and prep pans

As always, preheat your oven to 350 degrees F (175 degrees C). Grease and flour two 9×5-inch loaves pans. Do this before you start working on your batter

Sift dry ingredients

Sift your flour, baking soda, and salt into a large bowl, then sit to the side.

Cream wet ingredients

Cream the sugar and butter together in a separate bowl. Stir in the bananas, eggs, and walnuts blending them well.

Combine wet and dry ingredients

Pour the dry ingredients into the wet, doing so a half at a time. Make sure to mix just until combined. That means no flour lumps

If adding chocolate chips, toss them in the teaspoon of flour and hand mix into the batter.

Divide the batter evenly between the two prepared pans.

Bake

Place your pans in the preheated oven until an inserted toothpick comes out clean, this should be done from the highest point of your bread. A couple of crumbs on your toothpick is okay. Bake time can be 60 to 70 minutes. (Get to know your oven)

Cooling

Remove your beautiful loaves from the oven and let them cool in their pans for at least 5 minutes. Turn them out onto a cooling rack and let cool completely. This can take 30 minutes or so.

Serving

Slice and serve with some soft butter. (I like salted butter)

Some believe if you wrap it up and place it in the refrigerator for a few hours, the flavor intensifies. I’ll let you be the judge of that.
